Grilling with Johnny Stone

  1. Resist the urge to press down on hamburger patties while grilling. You won’t squeeze out the juice and end up with juicier, more flavorful burgers

  2. Be gentle when making the burger mixture. Overworking it can make the meat tough

  3. For perfectly grilled steak, keep an instant read thermometer close at hand

  4. Barbecue and other sauces can flare up if they drip into the fire so use a brush and shake off any excess before you brush it on the meat

  5. To avoid burned chicken, always brush on BBQ sauce at the end

  6. When grilling both dinner and dessert, be sure to really clean those grill grates in between courses

  7. Grill extra veggies and mix into salads or tuck into sandwiches

  8. If you do not have a grill brush, ball up some tin foil and use tongs to “brush” the grates clean

  9. Let the meat rest after grilling so they can reabsorb the juices

And because my wife, Stacey, likes fruit on the grill, I include tips 10 and 11:

  1. All kinds of melon take well to grilling; try it with watermelon for a juicy treat

  2. To get the perfect grill marks, don’t turn the fruit more than once

  3. Finally, you can certainly cook baked beans on the grill but make sure you use a pot. Otherwise they fall through the grate!
